Vanilijevo “mleko” iz zemeljskih mandljev

Ker kravjega ali katerega drugega živalskega mleka že nekaj časa ne uporabljamo več, preiskusili smo pa že kar nekaj nadomsestkov, z veseljem delim recept, ki ga uporabljamo doma, za pripravo presnega in res okusnega napitka, ki nam je najbolj všeč.

 

Sestava:

Zemeljske mandlje je potrebno najprej namočiti za 24 ur. Posodo z namočenimi zemeljskimi mandlji postavimo v hladen prostor. Po 24 urah jih precedimo, speremo in stresemo v mešalnik, dodamo 1 liter vode, sol in vanilijo in vse skupaj dobro zmeljemo. Z zmogljivejšim mešalnikom smo hitro gotovi, manj zmogljivejši bo to delo opravljal malo dlje (z vmesnimi postanki približno 5-10 minut). Tako zmleto vsebino precedimo skozi gazo ali skozi temu namenjeno mrežato vrečko in dobro ožmemo.

Pulpo ki ostane stresemo nazaj v mešalnik in prilijemo še preostale pol litra vode in ponovimo postopek, le da tokrat meljemo manj časa. Toliko, da se voda dobro premeša s pulpo in precedimo še ta preostanek. Tako pripravljen napitek lahko pijemo kot nadomestek živalskega mleka ali mleka iz oreščkov. Namesto mleka ga lahko uporabimo pri peki raznih peciv, palačink, za smutije, na njem lahko skuhamo pirin zdrob, ga uporabimo pri izdelavi presnih sladic…lahko pa ga uporabimo tudi za zajtrk ob presni drobTinkini granoli.

Tako pripravljen napitek bo ostal užiten 3-4 dni, shranjen v hladilniku. Pulpo, ki ostane nikar ne zavrzite, lahko jo uporabite za smuti ali jo vmešate v rastlinski jogurt ali za pripravo presne sladice. Če je nimate namena uporabiti takoj, jo lahko tudi spravite v vrečko in zamrznete za kasnejšo rabo.

 

Odlično je tudi v poletnih mesecih saj nas prijetno ohlajen osveži 🙂

 

Since we haven’t used cow’s or any other animal’s milk for some time now, and we’ve tried quite a few substitutes, I’m happy to share the recipe we use at home to make the fresh and really tasty drink we like best.

Recipe:

100 to 150g of tiger nuts
1.5 liters of filtered water
1 pinch of unrefined Himalayan salt half a teaspoon of vanilla powder (or 1 pod of vanilla).

Tiger nuts should first be soaked for 24 hours. Place the dish with soaked tiger nuts in a cool place. After 24 hours, strain them, wash and ground them in a blender with 1 liter of water, salt and vanilla and grind all together well. With a stronger blender we are done quickly, the less powerful will do this job a little longer (with intermediate stops of about 5-10 minutes). Strain the ground contents through gauze or a mesh bag and squeeze well.

Shake the remaining pulp back into the mixer and add the remaining half a liter of water and repeat the process, but this time grind less time. So much so that the water mixes well with the pulp and strain this rest. The drink prepared in this way can be drunk as a substitute for animal milk or nut milk. Instead of milk, it can be used for baking various pastries, pancakes, for smoothies, it can be used to cook milk rice, it can be used for making fresh desserts… or it can also be used for breakfast with fresh crumbs of drobTinka’s granola.

The drink prepared in this way will remain edible for 3-4 days, stored in the refrigerator. Do not throw away the remaining pulp, you can use it for smoothies or mix it into vegetable yogurt or to prepare fresh dessert. If you do not intend to use it immediately, you can also put it in a bag and freeze it for later use.

It is also great in the summer months as it refreshes us pleasantly chilled 🙂
