Bananini vaflji z namazom iz zemeljskih mandljev

For all my English speaking readers, just scroll down, you will find recipe in English too.

  • ker so bolj zdrava različica ostalim sladkim zajtrkom

V večji skledi z vilico pretlačite banano (tiste zrele s pikami na lupini so najboljše 😉 ) tlačite dokler ni masa gladka, brez glrudic. Nato dodajte olje, mleko, sladkor in limonin sok. Presejte moko, tapiokoino moko, pecilni prašek, cimet in sol.

Dober tek!

Banana waffles with tiger nut spread

If I want to brighten up my daughters’ morning, I definitely succeed with banana waffles, on which they then spread jam or a new spread of ground almonds: D And such a simple recipe that 1,2,3 are ready. The whole kitchen smells and my heart beats as I then watch us at the table enjoying our time together. She loves waffles because: they are easy to prepare because they are also adored by other family members because they are a healthier version of other sweet breakfasts because everyone can decorate and complete them in their own way because I can spread earth almond spread on them! : D

I love waffles because:

  • they are easy to prepare
  • because they are also adored by other family members
  • because they are a healthier version of other sweet breakfasts
  • because everyone can decorate and complete them in their own way
  • because I can spread earth almond spread on them! : D

Recipe:
  • 1 larger, ripe banana
  • 60 g of coconut oil, can also be ground almond oil or any other
  • 300 ml of vegetable milk from oats, almonds (or any other)
  • 1 teaspoon lemon juice (freshly squeezed)
  • 230 g of ground almond flour or any other flour, you can also mix it
  • 20 g of tapioca flour, also corn starch
  • 2 tablespoons coconut sugar or dates powder
  • 1 tablespoon tartar baking powder, or plain
  • you can also add a teaspoon of Ceylon cinnamon or any other spice to your liking
  • 1/2 teaspoon unrefined Himalayan salt
For spread:
– ground almond spread – natur or aromatic carob
– homemade jam coconut sugar + lemon

In a large bowl, mash the banana with a fork (the ripe ones with dots on the peel are best;)) press until the mass is smooth, without lumps. Then add oil, milk, sugar and lemon juice. Sift flour, tapioca flour, baking powder, cinnamon and salt. Stir everything together quickly so that all the ingredients come together nicely. Then add the melted coconut oil.

Set the dough aside to rest while you heat the waffle iron. Using a ladle, pour the batter onto the baking tray and bake until the waffles are slightly browned. If the waffles stick to the base, oil it a little with chip and oil.

Bon Appetit!
